General Manager

SUPERVISES: Directly responsible for supervision and management of entire culinary team also indirectly supervises and manages the entire service team


Directs and leads all aspects of culinary operations in accordance with company mission statement and values; participates in culinary operations (ie: expediting, working a station, etc.) as necessary
Leads, supervises and participates in the development of the culinary team
Develops and drives guest relationship building and adherence to culinary standards, including staff training programs
Directs and controls food costs, culinary labor costs, food inventory, food purchases, etc.
Directs the hiring of all culinary hourly staff; coordinates the hiring of management staff in coordination with the General Manager
Leads and participates in all off-site and on-site dining events (wine dinners, charity events)
Leads and coordinates quarterly menu development activities in coordination with executives including recipe and menu development, recipe books and POS updates
Directs monthly inventory activities to ensure accuracy and adherence to deadlines
Oversees repair and maintenance activities for all culinary equipment


Minimum 2 years of prior Exec Chef level experience OR 3+ years prior Executive Sous Chef level experience at a restaurant similar in scope/style to the appropriate restaurant (NOTE: Positions in restaurants with higher revenue may require additional experience)
Excellent culinary skills, as evidenced in pre-employment menu tasting
Excellent knowledge of kitchen equipment operations, maintenance & troubleshooting
Strong knowledge of general restaurant financials
Strong working knowledge of dining room & service operations
Strong working knowledge & skill in Word, Excel & Outlook and POS systems
